Cheese with Mid Impact Beer

Think light amber up to medium brown ale: medium hop bitterness, biscuit flavors, light roastiness and hints of toffee, coffee and caramel.

Brown Ales will deliver longer finish, more nuttiness and dried fruitiness. With beer that nudges at chocolate and caramel with a dose of grassy austerity you’ve gotta go with an aged sheep cheese.

The ubiquitous Manchego is fine, but ideally I’d get a French Ossau Iraty, or medium aged Italian Pecorino. Not too much salt, but dense, smooth fattiness, a hint of lanolin, all anchored by caramel.
